Replacing Eggs

If you are new to veganism and have never baked a cake or made pancakes without eggs, don’t panic, you can still eat the same amount of desserts you used to indulge in!

When you start cooking vegan meals, you will quickly find out that there is no need for eggs to make delicious recipes.

Eggs are generally used for 3 purposes: binding, moisturising and thickening and many vegan ingredients easily fill these requirements.

Most basic baking recipes do not call for egg replacement, but some recipes will use vinegar, ground flax seeds, pureed fruit, or silken tofu to add more moisture to the mixture.

Making Biscuits & Cookies

No egg replacement is needed.

The basic ingredients are:
  • Flour,
  • Sugar,
  • Baking powder,
  • Margarine.
Then, add the flavour you want: chocolate, vanilla, fruits, coffee, etc.

Making Scones, Muffins, cakes

To bake cakes, you do not have to bother about substitutes for eggs, although, sometimes recipes will call for vinegar, ground flaxseed, mashed bananas, etc, to add extra moisture or lighten the cake.

The basic ingredients are:
  • Flour,
  • Sugar,
  • Baking powder,
  • Margarine/oil.
  • Plant-based milk.
Then, add the flavour you want: chocolate, vanilla, fruits, coffee, etc.

Making Pies or Flan fillings

You can use agar flakes, arrowroot, and cornflour as a thickener.

Arrowroot and agar flakes act as a stabilizing and thickening agent once dissolved in water.

Cornflour is a starch and also thickens once dissolved in water or plant-based milk.

Tofu also makes a great filling. Simply blend the tofu with the flavouring of your choice and add to the mixture.

Making pancakes

No egg replacement is needed, although sometimes gram flour (made of chickpeas) is used to give consistency to the batter.

The basic ingredients are:
  • Flour,
  • Baking powder,
  • Oil.
  • Plant-based milk.
This basic recipe can be used to make pancakes (the thinner the mix, the lighter the pancakes), thick pancakes or batter.

Some non-vegan recipes use eggs, not for binding ingredients together but as the main ingredient.
For example, scrambled eggs, omelettes, egg sandwiches, etc.

"No Egg" Replacer


You can buy a product called “NO EGG” which is available at any health food store. It is made of different flours and starches and acts as a binder. Just add 1 tbsp of egg replacement + 2 tbsp of water to replace one egg.

This product can help at first but then, when you get more confident, you will find out you don’t need to use any egg replacement in your recipes.
